Homemade apple pie gelato is not just a dessert; it's a comforting slice of your favorite apple pie in a cool, creamy form. The warmth of cinnamon and the sour-sweetness of spiced apples come together beautifully in this gelato recipe, evoking familiar and cozy feelings. An ice cream maker makes this possible.

Perfectly Spiced Apple Pie Gelato: How to Get That Cozy Fall Flavor!
For this apple gelato, we will combine the gelato base with apple compote, like in my raspberry gelato recipe. You can find instructions for the base below. We will use the cinnamon apple compote recipe and add them to our base.
One of the beauties of this gelato is its versatility. You can easily adjust the intensity of the spices to suit your taste buds, whether you prefer a lighter, more natural apple taste or a full-mouth fall spices experience. For example, the spices are optional in my Mexican hot chocolate ice cream but enhance the unique flavor. Personally, I love it when the apples get a little flavor kick from the cinnamon, anise, and clove, which add to the apple pie aroma.
The graham cracker crumble is not just a topping; its buttery flavor enhances the whole apple pie experience.
Ingredients-Gelato Base
These are ingredients for gelato base, balances to adjust the sweetness of the Apple sauce we will add to it.

Whole Milk: Opt for whole milk with at least 3% milk fat, as using other fat percentages will alter the gelato texture.
Heavy Cream: (Whipping Cream) This recipe incorporates a modest amount of cream, contributing to its overall texture.
Skim Milk Powder: You can find this powdered milk at stores like Whole Foods or online at Amazon or other specialty stores. I used this brand in this recipe. The skim milk powder enhances the gelato and ice cream texture and adds a creamy texture.
Sugar: Granulated sugar or caster sugar.
Dextrose: You can obtain dextrose from stores like Whole Foods or online on Amazon or other specialty stores. I recommend using this brand. Its bag will last a long time, and it comes with a plastic bag that helps keep it away from moisture.
Stabilizer: I incorporate minimal stabilizer, well below the recommended label dosage. Note that this ingredient is optional. Stabilizers can enhance gelato texture and prevent ice crystals, but your gelato will work well without it if you plan to eat it in a few days. For this recipe, I use this stabilizer. To delve deeper into stabilizers, please refer to my post on ice cream stabilizers. In general, any commercial stabilizer would work well; don't hesitate to experiment. The stabilizer helps maintain the smooth and creamy texture of the gelato, especially if you plan to store it for a longer period.
Note: This recipe does not use egg mixture or egg yolks. Instead, the milk powder provides similar emulsifying properties.
Ingredients- Apple Compote
We will make a spiced apple compote with warm fall season spices and blend it into puree to get spice apple puree.

Apples: Peel and slice fresh apples into 1-inch cubes. The best apples for this recipe are tart and sweet apples, like Granny Smith apples, Pink Lady, Cosmic, and Honeycrisp Apples.
Brown Sugar: Brown sugar has an aromatic flavor that deepens the compote’s flavor.
Water: Cold tap water to help cook the apples.
Lemon Juice: A few drops of lemon juice will elevate the flavor of our compote and add freshness.
Spices: Vanilla pod, Cinnamon stick, Anise Stars, and cloves. You can substitute vanilla extract, anise, and cinnamon powder.
How to Make the Gelato Base

Step 1: Mix Powders
In a small-medium bowl, mix powders (Milk Powder, Dextrose, Stabilizer, Salt).
Set the bowl aside.

Step 2: Heat the Dairy and Sugar
Place the milk, cream, and brown sugar in a medium saucepan over medium heat.
Bring the dairy and sugar mixture to a gentle simmer while whisking it occasionally until the hot milk mixture simmers gently and all the sugar has dissolved,

Step 3: Add the powders and stir
Allow the gelato base mixture to boil gently for a minute. Reduce the heat to a minimum and continue whisking using a rubber spatula or a wooden spoon every 2-3 minutes. Cook for 7-10 minutes until the gelato base reaches 180F.

Step 4: Chill and age the gelato base:
Remove from the heat immediately and pour the ice cream base (gelato!) into a bowl in the middle of a large bowl filled with water and ice. Let the mixture cool until it reaches 55F or is cool to the touch.
Place in the fridge for the night or at least 4 hours to let the ice cream base mature.
Combine The Gelato Base With the Pureed Apple Compote

Step 5: Combine the pureed apple compote with the gelato base
Pour 250 gr of the cinnamon apple compote* into the chilled gelato base and use an immersion blender (optional) to homogenize the ice cream mixture.
*See instructions below on how to make the apple compote \ apple puree

Step 6: Churn the apple pie gelato
Turn on your ice cream maker according to the manufacturer’s instructions.
Churn the apple pie gelato mixture until it gets a soft-serve texture. Transfer the gelato into a pre-cooled freezer-safe ice cream container, layer with graham cracker crumble (OPTIONAL), and let it hard for at least 4 hours.
How to Make Apple Compote
Combine the chopped apples, water, and sugar in a saucepan and simmer over medium-low heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent sticking, for 20-25 minutes.
Remove the saucepan from the heat and add the vanilla bean pods, cinnamon sticks, anise stars, and cloves to the apple mixture. Squeeze in lemon juice.
Pour the compote into an airtight container and cool in the refrigerator.
Discard the spices (cinnamon sticks, vanilla pod, and anise stars) and Blend with an immersion blender until a smooth, pureed texture is achieved.

Graham Cracker Crumble Topping

Layer the apple gelato with crumbles of graham cracker crumble. This is optional but will complete the flavor experience with pieces of buttery pastry flavor that feel like an apple pie slice in a scoop. I use my Graham cracker crumble recipe for this combination or this pie crust leftover recipe.
How to Store
To prevent freezer burn to your ice cream or gelato batch, wrap the gelato container tightly with plastic wrap or a tight lid. Place it in the coldest part of the freezer, away from the door. For the best quality, consume it within a few days.
Thaw slightly in the refrigerator before serving.
How to Serve
Thaw Briefly: To enjoy the delicious gelato we have just made, remove it from the freezer and let it thaw in the refrigerator for 10-15 minutes. This step ensures easier scooping and enhances the creaminess.
Warm up your scooper: Dipping your ice cream scooper in warm water for a few seconds before scooping will help create smooth and even scoops.
Top your homemade Apple pie gelato with buttery graham cracker crumbles and drizzle caramel toffee sauce.
Variations
Caramel Toffee Swirl: Drizzle a homemade toffee caramel sauce or caramel ginger sauce through the gelato base for a caramel apple ice cream twist. This seasonal flavor is a fall favorite.
Pecan Brittle: Fold in pieces of pecan brittle for a nice crunch and a hint of sweetness.
Apple Pie Spice Swap: Experiment with different spice blends for a unique flavor profile. Add cardamom, ginger, or cloves for a different apple ice cream recipe.
Gluten-Free Option: Use gluten-free graham crackers or gluten-free cinnamon graham crackers for the crumble topping.
Optional: To enhance the apple flavor, use apple cider instead of water when making the apple compote\puree in this recipe.
Substitutions
Dextrose: You can generally swap Dextrose powder with a one-for-one amount of corn syrup or glucose syrup, which are also single-molecule sweeteners, and their punctuality is similar. Another option is to replace the Dextrose with more table sugar. Since dextrose is less sweet than sugar, the general rule of thumb is to replace the amount of dextrose in the recipe with 80% sugar (sucrose).
Dextrose helps soften the ice cream and absorbs water better without adding too much sweetness. Switching to dextrose will change the ice cream's texture a little, but you will still receive a tasty frozen dessert. Maple syrup is a different substitution option available in any kitchen. Swap the dextrose for the same amount of maple syrup.
Substitutions for Ice Cream Stabilizer
Using a stabilizer is optional to increase the frozen dessert texture and create fewer ice particles forming over time. I use 1 gram (¼ teaspoon) of a commercial stabilizer (ice cream stabilizer from Kitchen Alchemy, a mix that contains guar gum, dextrose, and carrageenan). This quantity is very minimal and totally optional. Using a stabilizer for the first time? Use as low as 0.5 grams per liter of finished ice cream and adjust as needed.
Otherwise, here are a few options to substitute the ice cream stabilizer:
- You can omit it from the recipe; it is optional!
- Use 1 g (¼ teaspoon) xanthan gum or Guar gum.
- Use 5 grams of tapioca starch ( 2 teaspoons) or 10 grams of corn starch (1 tablespoon +1 teaspoon) mixed with two tablespoons of cold water and whisked into the base when cooked.
- Use 1 g (¼ teaspoon) locust bean gum or commercial stabilizer mixed with the sugars.
To learn more about stabilizers, please refer to my post on ice cream stabilizers. In general, any commercial stabilizer would work well; don't hesitate to experiment with stabilizers.
Equipment
Ice Cream Maker: Using an ice cream maker is crucial to achieving your ice cream's desired smooth and velvety texture. I use a Cuisinart ICE 100 ice cream maker for my churn ice cream recipes. If you don't have one yet, you can explore my guide on how to churn ice cream without an ice cream maker. However, if you're considering purchasing an ice cream maker, it doesn't have to be expensive or complicated. Check out my guide on buying an ice cream maker for helpful insights.
Stick Blender\Immersion Blender: While not mandatory, this tool simplifies the whisking process and achieves a homogenized texture in our gelato mixture. Use a food processor or a blender if you don't have a stick blender.
Kitchen Scale: This tool ensures precise measurements, especially with ingredients like sugar or milk powder, which can significantly affect texture and flavor.
Food Thermometer: The food thermometer helps you monitor the temperature of the custard or base, ensuring it reaches the right point for thickening, leading to perfectly creamy ice cream every time.
FAQ and Troubleshooting
Absolutely! Frozen apples work great for this recipe. Just thaw them completely and drain any excess juice before using.
The churning time will vary depending on your ice cream maker. Reaching the desired consistency should take around 20-30 minutes.
Yes, you can! The "no-churn" method involves freezing the mixture in a container and whisking it periodically to break up ice crystals. However, the texture won't be as smooth as a machine-made gelato.

Notes
Substitutes- Apple Pureed Apple compote: Spices: If you prefer using spices as powders, swap the cinnamon sticks for 0.5 teaspoon cinnamon powder, the Vanilla pod for 0.5 teaspoon high-quality vanilla extract, and 0.25 teaspoon anise and clove. Other Spices options: 0.75 teaspoons of five spice powder or other warm spices mix. Apples: This is a great way to use all the apples you picked in your recent visit to a local farm’s apple orchards and wonder how to use them. This recipe is quite tolerable for a variety of apples. However, tart apples will work best, in my opinion. Brown sugar: You can substitute the sugar with an equal amount of white sugar or maple syrup. I tried it with all of them, and brown sugar worked best!
